In a crock pot, add chicken to one side. next to the chicken add the peppers and onions. top the pepper, onions, and chicken with the taco seasons, salt, and pepper. cook in the crock pot on low for 4-6 hours or until the chicken is cooked through. remove the chicken from the crock pot and shred. heat a large cooking pan and add butter or oil. add a tortilla to the pan and top with cheese. add shredded chicken, peppers, and onions on one half of the tortilla. fold the other side of the tortilla over the chicken, peppers, and onions. cook on both sides until the tortilla is golden brown and crunchy. remove from heat and serve. server with your favorite toppings! – sour cream, salsa, avocado, etc.
